We called our Brut "San Salvatore", after the hill on which the homonymous castle stands. In the highest part of the hill, well ventilated and where the soil is rockier, is the vineyard from which we harvest the grapes for our Brut.
A fruity and fragrant Brut, which rests on the lees for four long months, as per tradition, and gives us a creamy and subtle bubble that immediately makes you happy. Brut is the sparkling wine for special occasions, which the Counts of Collalto uncorked to inaugurate the great celebration at the Castle of San Salvatore and toast the beginning of the agricultural season.
At sight it has a beautiful straw yellow color with light greenish reflections. The perlage is persistent, elegant and regular and explodes in a dense and lively foam. On the nose, its fragrance characteristics reveal notes of just ripe Golden apple and Williams pear, on a delicate and pleasant floral background. On the palate its freshness dominates, without ever overpowering.
Excellent as an aperitif, in combination it goes well with fish appetizers, delicate fried fish, vegetable-based soups and risottos. It is recommended to serve it at a temperature of 6-8°C.

The Collalto family can trace their ownership of vineyards in the region to a document dated 958 AD, when Berengarius II, King of Italy, leased the county of Lovadina to Count Rambaldo I, the founder of the Collalto family. They are thus one of the oldest winemaking enterprises in Italy.

The estate today comprises 1500 hectares, 150 of which are under vine. 65 of these are planted solely for Prosecco. Principessa Isabella Collalto de Cröy inherited the vines from her father, and now personally runs this priceless heritage. The vines (aged from 10 to 50 years) are planted on marl, clay and limestone, at altitudes ranging between 200 and 300m.
The cellars were constructed in 1904 by Count Ottaviano Antonio Collalto, with the help of a young engineer named Carpenè Malvolti, and have recently been thoroughly modernised. 65% of the annual production is Prosecco Superiore Conegliano Valdobbiadene DOCG. Conte Collalto’s sensational Proseccos do not owe their rich, full style to a high sugar content nor to the addition of ‘foreign’ varietals. Rather, their elegance derives from the Susegana hills on which Collalto Glera is grown. There are hints of ripe white peaches on the nose, and, in bocca, there is a delicious rounded, creamy texture. Prosecco very Superiore indeed!

NB Collalto use no animal products either in the vineyards or the cellars. In consequence, all their wines are 100% vegan, and may be recommended with confidence to even the strictest vegans!

Returns

How long do I have to return an item to you? We will accept returns up to and including 7 days from the day of delivery.

How do I return an item? Simply return the item to the following address within the specified time, using any postal service. Remember to use a service that requires a signature and includes insurance as responsibility remains with you until we have signed for it.

Remember to enclose the printed returns note with your item or it may delay processing.

We try hard to accept all returns but returns must be in original packaging and in original condition. In the unlikely event that an item is returned in an unacceptable condition the item may be returned to you.
